Blackberry, Avocado, Arugula
Bored of the plain old salad with croutons and heavy dressing? Let’s freshen up this weeks meal prep with some delicious berries, avocado, and arugula! I swear this is one salad that you don’t want to miss out on! Gluten free and refreshing!
This is a recipe that I stumbled upon during a time I was experimenting with the ever so delicious and rejuvenating Plant-based diet. Every ingredient compliments one another and yet it’s easy to make substitutions for what ever reason. Both berries are a must but I know from experience that some may not enjoy either choice of the two (black and blue). Another great option is pistachios rather than hazelnuts. If by chance having any nuts isn’t an option, then water chest nuts could work.
Once in awhile I may forget to pick up an ingredient or have to adjust for another persons convenience but over the years I’ve played around with this recipe and can honestly say that I have yet to be disappointed!
Another great option that worked very well were STRAWBERRIES!! Yes I know, may not sound right once you read the ingredients for the vinaigrette, BUT it really is a must try!!

Ingredients:
Arugula - 5 Cups
Blackberries and Blueberries - 1 3/4 Cups
Avocado - 1
Feta (or vegan) - 1/3 Cup
Nuts (hazel, pistachios, or cashews) - 1/3 Cup
Cucumber - 1 (thinly sliced)
Vinaigrette:
Fresh mint - 2 Tblspn chopped
Olive oil - 1/3 Cup
Lime juice - 2 Tblspn
Salt and Pepper - Go crazy
Maple syrup (Natural) - 1 Tblspn
